Harvest Stew

With the threat of frost coming, we finished harvesting the garden this weekend. Picked the last of our squash and pumpkins and dug up the sweet potatoes. Last weekend I took care of the beets and the carrots as well.

This was our first year planting pumpkin and sweet potatoes and they both did pretty good! We got about a dozen pumpkins, not bad for only planting 2 hills. We chose Cinderella pumpkins and I'm SO glad we did. I absolutely love the look of them, the deep red color they ripen into is so beautiful. I also read that they are a prized dessert pumpkin so I'll for sure be canning some!

After all that hard work we had to warm up with some yummy stew! I had some beef to use up so I decided to throw a bunch of veggies together in the instant pot and see how it turned out haha! The recipe was pretty simple but delicious so I wanted to share.

I don't think you can go wrong with any sort of stew on these chilly Fall days, but I like to try and pack as many veggies as I can into meals, and I utilized a lot from our garden as well.

If you don't have an instant pot you could also make this in a crock pot but it would need to cook for much longer, I would imagine probably 6 hours or so.

We love it because it has the yogurt setting and we do actually use it to make yogurt, it's really easy! I use our IP almost every day and can't believe the amount of time we save because of it!

I love that this recipe only needs to cook on the stew setting for 35 minutes and the beef comes out practically shredded.

Ingredients

1 1/2 lbs beef stew meat (cubed)

1 cup chopped green onion

1 cup chopped celery

1 1/2 cup chopped carrots

2 medium sweet potatoes peeled and diced into cubes

8 oz sliced mushrooms

2 cloves garlic, minced

3 cups beef broth

2 Tbsp small tapioca pearls (helps thicken the broth, optional)

1 Tbsp Worcestershire

1 tsp Italian seasoning

1 tsp turmeric

1 tsp pink salt

Put all ingredients in the instant pot. Give it a stir. Close & lock lid. Push the Meat/Stew setting and quick release when it's done!
