Banana Pancakes

Life has been a little crazy with two rambunctious boys running around here but I wouldn't have it any other way! We have had a busy, but fun summer and have spent the last month or so canning a ton of stuff from our garden. I haven't had much time to jump on here but I have been playing with some recipes lately and made one that I thought was worth sharing.

Ellis has been pretty intent on feeding himself lately (no idea where he gets his stubbornness ha!) So I needed a yummy healthy finger food that I could whip up FAST for his breakfast. Insert -> Banana pancakes!

You are going to love how easy these are, and even though they're really great for toddlers, you can eat them too! They taste kinda like banana bread to me :)

Throw all the ingredients into a blender and blend until smooth- 60 seconds or so.

Spoon the batter onto a warm greased pan {I used coconut oil} . At this point you can add a couple berries on top if you'd like. I made half with and half without.

Cook until bubbly then flip and cook a few more minutes. After flipping I also pressed down to "pop" the blueberries so the batter cooked evenly. That's it! Told you these were easy :)

The best thing about these is you likely have all the ingredients at home already. They are gluten, dairy, and refined sugar free. So great for our littles to enjoy for breakfast or just an anytime snack!

Ingredients:

1/2 cup dry oats (make sure to use gluten free if you require it)

2 eggs

1 banana

1/2 tsp pure vanilla

Dash of cinnamon

Coconut oil (for greasing pan)

-Blend all ingredients until smooth.

-Spoon the batter onto warm greased pan or griddle. Add berries if desired.

-Cook until bubbly then flip and cook a few more minutes .

-Store in fridge to help them stay fresh longer.
