Banana Blueberry Oat Muffins - Only 6 Ingredients!

Banana bread is one of those warm and cozy comfort foods that I just love. I haven't made a gluten free version yet since cutting gluten out of our diet but I think I just found a replacement! You know I like simple and this recipe hit the mark.

No sugar, no flour, no dairy - just these 6 ingredients and you're left with an amazing, delicious, moist muffin to have as a snack or grab on your way out the door in the morning. These are easy to prep in advance for the week just store them in the fridge.

Start with your mashed banana then add the rest of your ingredients. Oats, vanilla, baking powder, egg, and lastly blueberries. I used quick cooking gluten free oats but you could also use regular old fashioned oats.

Spoon the batter into your muffin cups and fill them up pretty full because these don't really rise much. You'll end with 6 regular size muffins but I think next time I'll double the batch because these were a hit at our house!

Bake for 5 minutes at 425 then reduce the temp to 375 and continue baking for 12 more minutes. You'll end with these beauties! Enjoy :)

Ingredients

- 1 cup mashed banana (about 2 medium)

- 1 cup oats- I used gluten free quick cooking oats

- 1 egg

- 1 tsp baking powder

- 1 tsp vanilla

- 1/2 cup blueberries

Preheat oven to 425 and line your muffin pan with baking cups. This makes 6 full size muffins. Mash your banana in a bowl until it's smooth then add all the ingredients except the blueberries. Stir until combined then gently fold in the blueberries. Spoon into your muffin cups and bake for 5 minutes. Then reduce the heat to 375 and bake for an additional 12 minutes. Let muffins cool before trying to remove from the liners or they'll stick.
