Quick Healthy Dinners? Yes, Please!

A typical day for me starts at 5am...I get up, workout, get myself ready for work and my son ready for daycare then I'm off to work for the day. Run errands, pickup Ezra from daycare, go home and start dinner. When your day is constantly run run run the last thing you want to do is spend 2 hours cooking a healthy meal.

In my house I aim for simple. You will rarely find me making fancy meals unless I'm getting brave with a new recipe I find on Pinterest ;) You don't have to sacrifice health and flavor for convenience, you just have to get smart about your ways.

This is one of my favorite recipes, an oldie but a goodie that I wanted to get up on the blog for you all to be able to find! It goes like this:

*Veggie

*Veggie

*Protein

I use this combo SO often, 2 veggies, a protein, olive or coconut oil, seasonings, and usually cheese for some extra flavor.

This particular combo is Spinach, Mushrooms, Chicken Breast, & Feta sauteed in olive oil, minced garlic, and some pink salt. Its so easy you guys!! Anyone can throw this meal together and feel good about feeding it to your family. Here are some other combos I like:

- Broccoli, Mushroom, Chicken

- Asparagus, Mushroom, Steak (cubed)

-Carrot, Broccoli, Chicken

- Mushrooms, Spinach, Scrambled Eggs (and feta, yum!) <- Yep, this works for breakfast too

Honestly the options are endless! Don't be afraid to get creative with it, you know you're getting a good serving of veggies and filling up with protein, you can't lose. Got any good combo ideas? I'd love to hear them!

Ingredients

1 lb chicken breast

1 - 8oz package button mushrooms

2 cups fresh spinach

1/4 cup feta

2 Tbsp olive oil

1 Tbsp minced garlic

S&P to taste

-Cook chicken breast then cut into chunks and put back into the pan.

-While chicken is cooking saute the mushrooms in a separate pan in some water or olive oil. Once they're tender add them to the chicken.

-Add the minced garlic, feta, a drizzle of olive oil, pink salt & pepper to taste.

-Top with spinach and stir til it's wilted. Enjoy!
