Crock Pot White Chicken Chili

I typically do our grocery shopping on Monday so unless I'm stopping at the store throughout the week, by the time Sunday rolls around I need to get creative with what we have in the house. Yesterday I threw together whatever I could find that would resemble white chili while still keeping it low carb. It actually turned out pretty amazing and we'll be adding it to our favorites list!

I started with a large chicken breast (it was 1.25 lbs) and put it in the crock pot with a cup of vegetable broth - you could also use chicken broth I just didn't have any - then I poured 3/4 cup of salsa on the chicken breast and cooked it on high for about 4 hours, until I could easily shred the chicken with a fork.

I took the chicken out and shredded it on a plate then put all the meat back in to the crock pot with all the broth, juice, and salsa. Then I added the rest of the ingredients and cooked on low for about an hour.

This would be good with cream cheese in place of heavy whipping cream if you want it a little thicker. You could garnish with chopped green onion, cheese, avocado, fresh cilantro, or lime. Don't be afraid to get creative :) If you are not on a low carb diet and want to add white beans you could, or use some toasted baguette to dip in the chili.

White Chicken Chili

1 lb chicken breast

3/4 cup salsa

1 cup vegetable or chicken broth

-Place chicken breast in crock pot with broth and smother chicken with salsa. Cook on high heat for about 4 hours or until you can shred the chicken with a fork, shred it then place chicken back in the crock pot with the salsa and broth.

Next add:

3/4 cup heavy whipping cream

1 cup frozen corn (or one can of corn- drained)

1/2 white onion finely chopped

1 can diced tomatoes (undrained) I used a pint of our canned garden tomatoes and it gave it a hint of sweetness.

1 cup vegetable or chicken broth ( more if you'd like it thinner)

1 tsp chili powder

1 tsp salt

1/4 tsp pepper

1/2 tsp cumin

1/2 tsp minced garlic

1 cup shredded cheese

Stir everything together and let cook for about an hour. Enjoy!
