Sweet Potato Banana Bites

This is my VERY first blog post and it's equally nerve wracking and exciting haha! Since I have no experience what so ever in writing or composing a blog you'll all just have to bear with me while I get the hang of this please!

Lately I've been dealing with a picky toddler who will love a food one day and despise it the next (sometimes even later the same day lol). What makes it a bit more difficult for us is that we follow a grain free, gluten free, and mostly dairy free diet so our snack options are limited which means this mama needs to get creative! Today I made a super simple take on a mini muffin. Grain free, dairy free, and sugar free - woo hoo!

This recipe requires only SIX ingredients, you probably even have most of them in your pantry. The mini chocolate chips are optional but add a little bit more flavor, besides....who doesn't love chocolate?

I used a mini muffin pan so they're the perfect size for those little toddler hands. I did use liners but if you don't have any you can just grease the pan. Though clean up and removal is a lot easier when you use the liners.

The banana and sweet potato in these make them SO moist and delicious, you taste a hint of the peanut butter and they are a little sweet but not too much. Your kids are going to love these quick little treats and they won't even realize they're good for them! But you don't have to be a toddler to enjoy these, they're the perfect grab and go snack to eat on your way to work or before a workout.

Sweet Potato Banana Bites

1/2 cup mashed banana

1/2 cup cooked mashed sweet potato

1/4 cup peanut butter (or nut butter of your choice)

2 eggs

dash of cinnamon

mini chocolate chips (optional)

splash of vanilla (optional)

1. Combine the sweet potato and banana in a bowl and mash together.

2. Add the peanut butter, eggs, and cinnamon. Mix well.

3. Stir in chocolate chips or any other additions you may want (walnuts, coconut flakes, etc)

4. Spoon into lined or greased mini muffin pan.

5. Bake for 15-18 minutes at 375

6. Enjoy!

This is where I get the chocolate chips I used - I LOVE these because they're stevia sweetened which means NO SUGAR woo hoo!!
