Homemade Blueberry Snack Bars

I love being able to have healthy snacks ready to grab on the go. These are great for snacks and lunches and whenever I get a sweet tooth craving they cure it!

I'm sure you've all heard of, tried, or seen Lara Bars by now...simple little bars made with pure ingredients but you may have also noticed that they aren't very budget friendly. I've made my own version of lara bars for a few years now but I always made the same recipe (cranberry almond) and lately I've been craving blueberries so I made this recipe up yesterday with simple ingredients that we already had in the pantry and they turned out SO good!

The nice thing about these bars is that you can swap out the nuts/seeds for whatever nut you feel like or have on hand and they'll still work. Same goes with the dried fruit but you always want the dates as a base.

I started by throwing all the ingredients in the blender/food processor and pulsed until the mixture became sticky and started to form a ball.

Pitted dates - dried blueberries- vanilla extract - gluten free oats - raw cashews - pecans- hemp seeds.

Once everything is finely chopped dump it all out on some parchment paper.

Use your hands to pack the mixture down and flatten it out into a circle or square. You can also pack it into a baking dish but I find its easier to cut them when they're just on a flat surface. Refrigerate for a few hours to firm up.

Once the bars are firm you can take them out and cut them into squares. I get about 15 bars out of this recipe. Keep in mind that while these bars have clean healthy ingredients, the fruit is still high in sugar so you don't want to go overboard and eat the whole batch in a day ;)

Ingredients

1 cup pitted dates

1 cup dried blueberries

1 tsp vanilla

1/2 cup oats (I use gluten free)

1/2 cup raw cashews

1 cup pecans

1/8 cup hemp hearts

Put all ingredients in a blender/food processor and pulse until finely chopped and the mixture begins to stick together. Spoon the mixture onto parchment paper and flatten into a circle or square. Refrigerate for a few hours to firm up then remove and cut into squares. Store in fridge.
