Homemade Pizza With Coconut Flour Crust

When we cut grains out of our diet there wasn't a whole lot that I missed...besides pizza!! I needed to find a way to substitute pizza crust so I got busy trying new recipes and THIS is one that we absolutely love!

I've done the cauliflower crusts and while we do like them, they are messy and time consuming. We still make them on occasion and it's nice that they're low carb but if you've ever made one you know that you have to get ALL the water out before baking or you'll end up with a sloppy mess and to me that's the hardest part. Not to mention blending up that cauliflower creates quite the mess in the kitchen.

This recipe is simple, just a few ingredients and the final product gives you a nice firm crust that you can pick up and eat. The leftovers heat up nicely too (if your family doesn't devour it all that is!)

First step:

Whisk together eggs, water, & seasonings then gradually add the coconut flour stirring until most of the lumps are out. Then add the grated parmesan. Let the dough sit for a few minutes so the coconut flour can absorb the liquid.

Cover your pan with a sheet of parchment paper then grease the paper with olive oil (I use organic olive oil cooking spray). Spread the dough into a thin layer either one big pizza or two small pizzas if you'd like. The dough doesn't really rise so you want the layer to be about as thick as you'd like the crust to be. Then Bake at 400 degrees for 15-20 minutes until the edges are slightly browned like this

Next it's time for toppings! We usually go for simple, cheese and pepperoni. Sometimes we add jalapenos, olives, or mushrooms. I love this uncured pepperoni which is also nitrate free!

Toppings are done: Organic tomato sauce, shredded cheese, and pepperoni. Next turn on the broiler and put the pizza in for a few minutes until the toppings are cooked.

It doesn't take long in the broiler so make sure you keep an eye on it. Perfection!

Ingredients

  • Olive oil spray for pan

  • 4 large eggs

  • 2 tablespoons water

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried oregano

  • ¼ cup coconut flour

  • 6 tablespoons grated parmesan cheese

Topping:

  • ½ cup tomato sauce

  • 1 cup shredded cheese

  • Uncured Pepperoni

Instructions

1. Preheat oven to 400

2. Line baking pan with parchment paper and spray with olive oil

3. Which together eggs, water, garlic powder, onion powder, oregano

4. Add coconut flour and stir til most lumps are gone

5. Add parmesan cheese and stir. Let dough sit for 5 minutes

6. Spread dough out onto pan in thin layer then bake for 15-20 minutes or until the edges are slightly browned.

7. Remove the crust from the oven then add your toppings.

8. Turn the oven to Broil then place the pizza back in. Broil for a few minutes until the toppings are cooked.
