One Pan Veggie Egg Scramble

This dinner is quick and simple just how I like it! Eggs don't have to be just for breakfast. They're packed full of protein for a hearty lunch or dinner as well! This recipe is versatile, you can include whatever veggie/cheese combo you'd like. I don't even measure anything, it's pretty hard to screw up ;)

Start with around 3 cups of fresh chopped veggies. It seems like a lot but they cook down quite a bit. I used mushroom, onion, red pepper, broccoli, & minced garlic. Again, any veggie combo should work here- get creative!

Drizzle the veggies with olive oil (about 2 Tbsp) and some salt and pepper then saute until the veggies cook down and are tender but not mushy. This usually takes around 6 minutes.

While the veggies are cooking whisk 8 eggs in a separate bowl with 2 Tbsp heavy whipping cream ( or 1/4 cup milk) then pour the eggs over the veggies and stir. Cook on medium heat stirring occasionally until the eggs are fully cooked.

Sprinkle with feta or cheese of choice and stir to combine.

Viola! This is such an easy way to work more veggies into your diet (and your kids). Don't be afraid to try new combos :) Enjoy!
