Just Like Mama Makes
We all have that meal that you used to eat as a kid and whenever you're wanting a little "comfort food" it's the first thing you think of. This recipe is just that for me. I remember my mom making this all growing up and I know some of you are going to think this combination is weird but seriously...it's the best!
This is definitely NOT low carb, quite the opposite actually lol - but it's not terribly unhealthy and tonight it was just the comfort food I was craving. It's also pretty easy to make and you know that's always a plus in my book ;)
Are you ready for this....cause it's like 3 ingredients haha!
Start by peeling, cutting and boiling 3lbs of potatoes. When they're done mash them up with a hand mixer.
Meanwhile cut up a kielbasa sausage into little pieces and fry it in a pan until it's browned. I use a nitrate free smoked beef sausage.
In a 9x13 baking dish I put my first layer down, Sauerkraut (drained) ..... I know there are a lot of kraut haters out there so if that's you, move along lol! I could eat kraut daily straight out of the jar mmmmm
Once the sausage is done layer that on top of the kraut, like so....

Next top with your mashed potatoes, salt and pepper, and a couple slabs of butter. Pop it in the oven for 20 minutes at 400 degrees and you'll soon be enjoying this deliciousness

The top will be nice and crispy, slightly browned on the edges

1- 32 oz.bag sauerkraut- drained
1 pork or beef sausage 12 oz.
