One Pan Veggie Egg Scramble
This dinner is quick and simple just how I like it! Eggs don't have to be just for breakfast. They're packed full of protein for a hearty lunch or dinner as well! This recipe is versatile, you can include whatever veggie/cheese combo you'd like. I don't even measure anything, it's pretty hard to screw up ;) Start with around 3 cups of fresh chopped veggies.
